THE ESSENCE OF COLOMBIAN GASTRONOMY
Colombian gastronomy is characterized by being very diverse, all this thanks to the multiple flavors, colors or textures that food possesses, depending on the region where they are located, which is why it is very difficult to characterize a typical Colombian dish, since each region Identify a different typical dish, so next I am going to expose five typical dishes belonging to different regions of the country.
It is a delicacy from the Santander region of Colombia, a region north of Bogotá that is home to the cities of Bucaramanga, Barichara, San Gil and Floridablanca. The Big Ants are a specific, large and leaf-eating species of ants that are traditionally found in this region and are eaten for their taste. These ants can be served fried or roasted in salt, and are crushed or kept whole.
Pan de bono is a traditional bread originating in the Valle del Cauca region in Colombia, made with cornmeal, cassava starch, cheese and eggs, and is occasionally served with guava paste. While pandebono can be tasted in many bakeries across the country.
A wafer is a typical street dessert found throughout Colombia. This dessert is made from two round wafers interspersed with a variety of fillings, such as arequipe, jam, chocolate, sprinkles or sugar. A great place to find wafers with a wide range of fillings is at Plaza Bolívar in Bogotá.
Native to the Bogotá region and the Andes Mountains of Colombia, but more recently found throughout the country, this traditional soup is ideal for the coolest mountainous locations.
This dish is a white soup made with chicken, a variety of two or three types of potatoes, corn, sour cream, and is generally served with white rice and avocado.
Arepas are the most common traditional dish in Colombia and are served as an accompaniment or as a meal in itself. Arepas are served throughout Central and South America, but Colombia has its own type of original arepa.
The arepas can be of various varieties, including the chocolo arepas (made from sweet corn and stuffed with cheese), the cheese arepas (stuffed with cheese), and the rice arepas (a fried arepa with a cracked egg inside and then refried). Each region of Colombia has its own traditional way of eating and making arepas.
